At a traditional Black Country market in Bilston there were plenty of suggestions on how to enjoy the often overlooked must have item for Christmas dinner.

The JD Produce independent fruit and vegetable stall on Bilston Market was doing a roaring trade in sprouts and Julie who works there recommended lightly salting the water and adding butter to them when on the plate to give the sprouts more flavour.

She said: "I will be going to my sisters there will be around 12 of us and it is likely there will be some sprouts and other items left over but I always think the best thing is putting everything together the next day and cooking them again.

"My recommendations for left over sprouts would be to add chestnut, bacon, nutmeg and cinnamon and fry them up, maybe with some parsnips if you still have them - I sometimes think the Boxing Day leftovers is the best bit in terms of Christmas food.

"The sprouts have really been selling well - they always do at Christmas but this last few days leading up to it they have been going fast"

Adrian Ojelay was buying his vegetables and other items for Christmas dinner which he said his wife would be cooking them ''Avante' to the bite.

He said: "I love sprouts and this stall sells them on sticks which keeps them fresh so I come here most years - I think sprouts are an under-rated part of Christmas dinner."

Samantha ROberts from Wolverhampton was another advocate of cooking the sprouts left over from Christmas day with other items. She said: "I love glazed parsnips so when I cook Christmas dinner for my husband and kids try to make sure there are some left over for the next day so I don't really have to cook again, just mix them together and bang them in the oven."

Yasmin, who is from Dudley but had come over to Bilston to do some last minute Christmas shopping said: "My brother;s wife will be doing the cooking and I don't have any specific requirements for sprouts but I do like them and I know they are good for you as well so the more the better."
