Staffordshire pub set to reopen its doors following a Mediterranean makeover
Ego at The Hollybush in Stockton Brook, part of the Ego Mediterranean restaurant and bar group, is set to reopen its doors on Friday, 1 August following a major transformation project, which will give the popular restaurant a refreshing new look.
The new site will combine authentically rustic yet modern interiors with mouth-watering dishes to provide guests with the perfect place to escape to the Mediterranean and celebrate the moments that matter.
During nearly 4 weeks of renovations, Ego at The Hollybush will be transformed into a vibrant, welcoming dining space, and will create 12 new jobs for the local area, with more roles anticipated after reopening.
At Ego at The Hollybush, guests can savour dishes from across the Mediterranean with a menu that’s inspired by sun-drenched coasts from Amalfi to Andalucía. The restaurant will seat 100 covers, while the bar area will seat an additional 30. While in the autumn months the restaurant will see work completed on its orangery’s area which will allow for further 55 covers.

The renovation will also see the introduction of new draft beers, including Madri, Aspall and Beavertown Neck Oil.
Guests at Ego at The Hollybush can expect only the best of the Mediterranean when visiting the new restaurant — from its delicious Paella Mixta, a festival of seafood, chicken and vegetables, to its Duo of Pork with a serrano wrapped fillet & honey glazed belly pork. All perfectly complemented with a refreshing Aperol Spritz or a crisp Pinot Grigio.
