Ishmael Miller netted twice as he completed a 45-minute outing on his comeback from a calf problem and his efforts looked to have set up a Baggies victory.
But Borini had other ideas as the visitors turned yesterday's game on its head.
Albion made a flying start and broke the deadlock when Miller converted a cross from Lateef Elford-Alliyu.
Elford-Alliyu then netted from a Romaine Sawyers pass and Miller made it 3-0 with a blistering 25-yard shot.
But the visitors rallied and in the 31st minute Ryan Allsop parried Jacopo Sala's 12-yard strike and Borini tapped home the rebound.
Two minutes later Borini scored again and six minutes after the break his hat-trick from the penalty spot.
Sub George Thorne ball teed up Elford-Alliyu to make it 4-3 three minutes later, but the lead was short-lived as Borini struck twice more to seal an amazing 5-4 win.
