The blaze at the Waggon & Horses, on Cannock Road, started on the top floor and spread, causing extensive damage.
Eight fire engines were called at around 10.30pm last night and spent about two hours tackling the flames.
The pub was shut down by licensing bosses last August.
First City, the property consultants looking after the site, say a national supermarket chain is lined up to take over the site.
The firm was unavailable for comment.
