From chocolate concrete and cookie pies to old school sponge decorated with sprinkles, Amanda Leek can be found serving up her handmade bakes from the counter of her cake shop or on the road in her pink van.

Her baking journey began when she wanted to make birthday cakes for her two children.

“I enjoyed making them for my kids. I got better and better and then people started asking me to bake cakes for them too,” explains Amanda.

The 39-year-old set up Fairy Good Cakes making celebration cakes from home alongside her full-time job as a carer around six years ago.

Her business continued to grow and in 2021 Amanda took on a new challenge by opening a tearoom in Cannock

“It came up and I thought I would give it a try. Unfortunately, it didn’t work because the location wasn’t very good and I closed after six months.

“But it did give me the idea for the van because I knew location would never be an issue,” she explains.

Amanda started by acquiring a trading licence for Walsall borough and after the cake van proved a hit with customers, she also applied for a trading licence for Cannock Chase borough.
