Faster pasta

We all know how it is. You get in from work tired and hungry, and have absolutely no energy to cook anything!

You reach for the phone and dial your favourite takeaway and wait around for an hour before it arrives…getting hungrier and hungrier as every minute passes!

How about if I told you about a dish that you could have on the table 20-30 minutes after you have got in from work?!

My pasta with chorizo and peas is just that dish, and the sauce is ready in the time it takes the pasta to cook!

Chances are you already have everything you need for this dish in your cupboard and the fridge. You can add different ingredients to the sauce depending on what you like, for example, dried or fresh chilli or some bacon lardons.

Pasta with Chorizo and Peas

Ingredients (serves 1 hungry person!)

• 100g pasta of your choice, cooked according to the packet instructions

• Olive oil

• Six-eight chorizo slices, cut into quarters

• Two inch piece of chorizo sausage, cut into 1cm rounds

• Half an onion, peeled and finely chopped

• One garlic clove, peeled and finely chopped

• One tin of chopped tomatoes

• 50g frozen peas

• Small bunch of fresh parsley, chopped

• Salt and pepper, to taste

• Parmesan cheese, to grate on top (optional)

Method

1. Put the olive oil in a frying pan and add the chorizo. Fry for a couple of minutes until the oil has seeped out of the chorizo.

2. Add in the onions, garlic, and a small pinch of salt and fry for a few minutes until softened.

3. Add in the chopped tomatoes and allow the sauce to simmer for a few minutes, stirring occasionally.

4. Add in the peas and allow to cook for a minute. Then turn off the heat, add in the chopped parsley and stir.

5. Serve in a bowl with the cooked pasta, and a large helping of Parmesan cheese on top. Enjoy with a glass of red wine!
