Sales of black pudding across the Black Country are on the rise.
The increase in its popularity has been put down to its inclusion on menus at posh restaurants across the region.
One butcher in Dudley has even reported a 50 per cent rise in demand.
Black pudding has in the past remained outside the culinary mainstream – largely because one of its major ingredients is pigs’ blood.
But with tastes changing, it now features on the menus at some of the top Midlands eateries.
Video journalist Victoria Hoe visited one Wolverhampton butchers to find out what the public made of the newly-fashionable dish which had its hey-day during and just after the Second World War.

black pudding is also made with blood from cattle , not only pigs blood , the modern way it is made from a powderd sterelised blood which is more hygenic and has either grouts , or pearl barley ,pork fat ,seasoning ,salt ,kibbled onions ,you can also add minced pork to taste . it is very good for you it contains iron .

Oddly enough they eat a similar dish in Taiwan and in the Philippines.
It should not be eaten raw.

Go to Conakilty in Southern Ireland they make and sell the best Black Pudding in the world.
Try it with a drink of the Irish black stuff.

Luckily there’s a local bar owned by a british butcher… real bacon, real sausage and real black pudding. Some things just can’t be substituted!
