New chefs take over Wolverhampton bistro

Two chefs with years of experience in the food industry plan to cook up a storm after taking over a well-known bistro in Wolverhampton.

Trevor Greenaway and Glen Millis have taken on the lease at Banks Bistro, in Bath Road, Chapel Ash.

The keys were handed over to them last week.

Mr Greenaway, 30, from Wolverhampton, has been a chef since he was 15 and already runs Ye Olde Toll House restaurant, in Willenhall.

He started there over two years ago and is the managing director.

Mr Millis, 29, from Walsall, has also enjoyed a successful career in the food industry working for both Jamie Oliver and, most recently, Marco Pierre White.

For the past three years he has worked at the chef's Steakhouse Bar and Grill based at the Cube, in Birmingham.

The pair decided to take on the bistro as they wanted to pursue a project together.

And they were delighted when the opportunity to take over the bistro arose.

Mr Greenaway said: "After so many years we wanted to take on something of our own - a little bit of security for the future.

"The bistro came up quite suddenly and it was such a wonderful opportunity we had to take it on."

Mr Millis will oversee the day-to-day running of the restaurant.

He said: "The bistro already has an excellent reputation and we want to build on that.

"Our aim for the future is to provide the area with the best venue serving the best food.

"I will be overseeing the kitchen and Trevor will be helping out when needed. It is a really exciting opportunity for us.

"It promises to be a wonderful challenge and we will be putting all of our experience into making the bistro a success."

The pair have taken on the restaurant lease for 15 years.

Kultar Deol, who still owns the building, said he had wanted people with experience of the industry to take on the running of the bistro.
